On Sunday, I was in need of a quick and easy dinner idea which could translate into some lunch leftovers for Monday morning. I ended up following a recipe for Emeril’s Chicken Salad With Fresh Herbs. The recipe can be found here. The reason the recipe caught my eye in the first place was the idea to serve the chicken salad in avocado halves. So pretty!
This chicken salad has a great depth of flavor. The cayenne (which I added liberally) provided a great kick, which was balanced out by the cool avocado. The celery and red onion added a nice crunch too. There are a few surprising ingredients, such as celery leaves, celery seed, and dijon mustard. I will definitely be making this again!
