I love breakfast for dinner. I especially love something breakfasty that is healthy and filling, and won’t leave me running to the kitchen for a snack shortly after (though, pregnancy has had a funny impact on my appetite – I am constantly hungry)! I recently cooked up a tasty ham & cheese fritatta, using this recipe from Annie’s Eats, one of my go-to food blogs.
This tasty fritatta contains asparagus, scallions, and ham, in a base of eggs, milk, and cheddar cheese, which is seasoned with salt and pepper. This meal whips up quite fast – I think it is a happy medium between basic scrambled eggs and a more labor intensive quiche. It is partially cooked on the stove top and finished off in the broiler. I let my frittata get a wee bit too brown in the oven (oops), but it still tasted delicious!
This fritatta was so, so good. The eggs had the perfect consistancy without being dry, and I got a bit of the mix-ins with each bite. The ham/asparagus combo was certainly tasty, but there is also a lot of room for adaption with this recipe. Substituting other meats, cheeses, or veggies could create an entirely different effect! I’m thinking of trying out a southwestern adaption with some black beans and jalapenos - mmm! Over the course of a few days, I ate the leftovers for breakfast and/or lunch. I will definitely be making this again!
