I’m crazy about the combination of smoked salmon and cream cheese. I came across an idea for a light meal in Everyday Food Magazine which I couldn’t pass up! They are smoked salmon toasts with poached eggs, yum!
Start off by toasting two slices of your favorite fresh bakery bread. Spread with cream cheese, layer with smoked salmon, and top with a poached egg. Easy peasy!
I still have not perfected the art of making a poached egg. I have a little metal contraption for poaching eggs which looks like a small triangular muffin pan. The poached eggs which result tend to be a little dry and overdone. One of these days I will learn how to do them the “real” way. What about you, do you ever poach your own eggs?
